This might be an odd question, but how do you decide which Pokémon to catch? Do you catch every one you see, or...?

Yeah, though I somehow ended with a bunch of Fairy-types after the Big November Type Change.
Even as a Skrelp, my Dragalge firmly believed in hugs and in cutting off my blood flow. It was almost adorable.

When Seaweed hugs, he hugs hard. I'm not sure if that's shared with all the members of his species, or if it's just his own personal quirk.

That bit of hope is... a good sign, I guess? Not every species can emote openly, but every little sign of feeling is important.
