This might be an odd question, but how do you decide which Pokémon to catch? Do you catch every one you see, or...?

I've only caught a couple and forced them to be the best they can be. I'm even training one to accept sticks to be thrown at it! I'd say whichever one comes to you first and you can catch is the most desirable.

You can really train them to do that...? [ Now that she thinks about it, it doesn't seem too far-fetched. ] So some just... don't want to battle?

Of course! Any small creature, pet or otherwise, can be trained to take a well rounded stick to the face or any other command that a master might find necessary.

[A pause.]

I would assume pokemon have an instinct to battle but that can be taken from them! [Such dark words and yet what a cheerful tone he has.]

[ She looks more than a little vaguely unsettled. She's not sure she could do something like that, but... to each their own? Her next words are slow, and her discontent is fairly obvious. She's never been very good at hiding how she feels. ]

Simply. They would be persuaded to change their ways. Of course I choose to battle them, train them and push them to the best that they can be. With little rest and a pure drive of forced productivity they truly are the best of the beast. Perfect in every way.
